Fried shallots are a staple in Asian cooking dishes.These magical savoury crispy flakes are often found at the last stop of numerous restaurant kitchens - right before the dishes are sent out to the customers.This is because many dishes can be elevated with a healthy topping of these versatile crunchy and flavourful garnish.
Why Indonesia
The quest to find the best shallots was not an easy one and took us to the birthplace of the sweetest product available, Probolinggo Regency, East Java Indonesia.There we met with many local farmers to understand how shallots grown in volcanic ground had such a distinct flavor and then cooked them in coconut oil to make them crunchy!
